The salt pans at Marsalforn have been used for sea salt production for centuries — seawater is channelled into shallow rock-cut pools where it evaporates in the Mediterranean sun, leaving behind coarse salt that's sold across Gozo and Malta. The tradition is maintained by a handful of families who harvest by hand. The salt pans are particularly photogenic at sunset.
